Fresh Summer Salad

Tomato Peach Salad

This is one of my favorite summer salads. The tomatoes and peaches need to be dead ripe for it to be good, so stop by the market for the best of each.

4 heirloom tomatoes, ripe but not soft

4 peaches, ripe but not soft

Extra virgin olive oil

Freshly squeezed lemon juice

Salt and freshly cracked pepper

Slice the tomatoes into wedges, making certain you remove any green bits near the stem end. Slice the peaches into wedges the same size as the tomatoes, removing the pits along the way.  Drizzle lightly with olive oil and a splash of lemon juice.  Season with salt and pepper.  Very gently toss and serve.  Nice additions would be feta or fresh mozzarella, basil, or walnuts.
